Siembra Valles Ancestral is the result of David Suro Piñeda's fascination with the history of agave spirits and wondering what the first tequilas tasted like. The production methods used for this very special bottle are more akin to traditional mezcal than present-day tequila. The agaves are roasted in an earthen pit, then crushed by hand with wooden mallets.
