11 Brix highlights the most important part of tequila production: fermentation. Maestro tequilero Salvador “Chava” Rosales divided the cooked agave into three separate fermenting tanks before combining: stainless steel, cement, and wooden. This extremely limited tequila is bottled at still strength, which is 53% ABV.
